The cane’s fibrous stalks are rich in the sugar sucrose, which is crushed out of the cane and once the water content is evaporated out, becomes the raw sugar most consumers are used to. Thailand is the world’s second largest sugar exporter, after Brazil. Since 2010 the government of Thailand has worked to transition rice farms to sugar farms in order to increase production. This has not been without controversy due to sugar cane’s use of the herbicide Paraquat, which is toxic to humans and animals.
